This is a fun cookbook - all of the Light & Tasty Recipes from 2004, sorted by category. What more could you ask for! Below are some of the recipes I've tried so far (and I have LOTS more marked to try). This is being sold for almost nothing since it's now several years old. Get it - it's great and a great bargain! All recipes have the nutrition info. That's my absolute minimum criteria from now on - all cookbooks I buy must have the nutritional information. In this day and age I'm not sure why any cookbook wouldn't have this information!!
CINNAMON PEACH CRISP (*****)
YUMMY and EASY. I loved it warm out of the oven, my husband loved it with whipped cream, but has asked me to make it with blueberries next time. We'll see - I sure love peaches. I made it with 1 bag of frozen peaches.
ZIPPY SLOW-COOKED CHILI (*****)
YUMMY and EASY. Wonderful with a dollop of reduced-far sour cream and some fresh onions for crunch and garlic bread.
SPICY KIELBASA SOUP (****)
Good soup - mine wasn't spicey, but I wasn't going to spicy.
CABBAGE ROLL BAKE (*****)
OK - I had tried this previously from my Light & Tasty magazine but it's in this book also and I love, love, love, love this. I throw a LOT of dried parsley in for color. Wonderful, easy cabbage roll casserole. What a great idea!!!
SOUTHERN BARBECUE SPAGHETTI SAUCE (*****)
I had actually tried this also previously from my Light & Tasty magazine and it's yummy and a wonderful slow-cooker recipe.
PINEAPPLE SHRIMP KABOBS (***)
It looked like the picture in the book - very pretty, but I didn't love this and won't make it again. Maybe it was because the raw shrimp I had bought had said on the package it was deveined but it really wasn't deveined and it sure is a slow, yucky job to devein shrimp.
WARM BANANA PUDDING (****)
Good out of the oven, but even though the bananas had lemon juice on it, it turned brown quickly - the next morning, and the vanilla wafers were yucky the next morning. It really would be much better without the bananas and vanilla wafers if it's not going to be completely eaten the first day.
