I've tried three recipes so far from this collection, each one more complex than the last, as I gain my trust in this author. The Baked Eggplant was ridiculously easy (just cut the eggplants into cubes and cook on low for 4-6 hours, then add the seasonings after the cooking is done.) Next I tried the Tuscan White Bean Soup, which was excellent and not at all watery, like most crock-pot soups. Finally, I made a pot of Mexican Chicken in Peanut and Ancho Chili Sauce, and I can finally say that I've found a crock pot book that really does work.
The author encourages crock-pot users to lift the lid and stir while the food is cooking; I heartily agree, because the food ends up well cooked and NOT the watery, insipid mess I usually got. These are recipes that will not taste like a well-meaning, "good-for-you" home economics project. But this means you can't start your supper in the morning and have it done when you're back from work: the result may be watery. That's been my experience with other books, like Judith Finalyson's.
So if you're going to be home and willing to keep an eye on your slow cooker while it's doing its thing, you will be very satisfied with the recipes in this book.

I borrowed a copy of this cookbook from a friend. My husband and I had already been on the Atkin's diet for a month and I was thrilled with the amount of weight and, more importantly, inches we had lost, but was getting a little tired of eating the same foods again and again. Over a weekend, I tried a lot of the recipes in the cookbook while we were at our cabin. My cooking utensils and ingredients were slightly limited there in the Northwoods, but I made some slight variations (i.e. substitute a little onion for scallions, skip the white wine, etc.) and we proceeded to eat like pigs while sticking to the diet. After reading through the recipes and learning substitutes for high-carbohydrate ingredients, I can adjust recipes in my regular cookbooks with the same satisfying results. We have actually been eating better tasting meals than before the diet because I enjoy the challenge of cooking rich meals while maintaining our weight loss. The best part of the cookbook for me was the desserts. I rarely cooked desserts before going on the Atkin's diet because they are so fattening. I made a few small adjustments to the cheesecake recipe and came up with the best darned cheesecake I have ever eaten. Even had it for breakfast to feel truly decadent. Another happy surprise was that unsweetened chocolate is not that high in carbohydrates. The only disappointing recipes I tried were those that contain soy flour. Soy flour, not surprisingly, tastes like soy beans and does not want to mix into liquids. The book also mentions tofu flour which is not readily available at grocery stores and probably tastes like beans. As the recipes call for so little flour of any kind and we are now in the maintenance sequence of the diet, I think a little "cheating" is in order. Try the recipes in the book, then get creative!

Well, low carb has been all the rage for sometime now although the fad seems to be slowing down somewhat. But not before TV's spunkiest cook can put her stamp on low carb as Rachael Ray does in her latest book. At 256 pages this is Rachael's largest book yet. I've never quite been able to get meals done in 30 minutes. i guess it probably helps having good editors and a staff but even at 45 minutes or so I've enjoyed every one of Rachael's books. It's good food where taste is first, not fancy presntation and ingredients that have you haunting exotic food stores to find.
The recipes here are not all that low-carb so don't be put off by thinking it's a diet cook book. It's just another great one from Rachael where carbs are used in moderation, but not at the sacrifice of taste. Call them good-sense carb recipes as opposed to low-carb. There's plenty of bread and pasta to be found inside. With all her books the emphasis is on good food and good food done fast and this one, like the previous ones, is right on the mark. Wonderful Italian and Mexican dishes, burgers, even desserts. And it all comes to you in Rachael's endearing, homey way of writing that comes across so well on TV. With her new publisher now being a part of Random House, the book is much more well-presented than her previous ones. Bolder colors that stand out and just plain look better.
