This delightful,slim volume is incredibly easy to use, with a great variety of tips & tricks for virtually fool-proof muffins. Best of all, the recipes cover the gamut from no-fat to low-fat, with no sacrifice of flavor or texture. Sweet or savory, they are all good. Among my favorites, pineapple corn muffins & blueberry creme muffins. My sister, an accomplished baker, swears by the Irish soda bread muffins, and the no-fat blueberry jam recipe.

I've enjoyed previous editions of "Top Secret Recipes" by Todd Wilbur, and have been impressed yet again by the terrific recipes and food-chat offered in "Top Secret Recipes Lite!"

I was very excited to get this book, until I actually got it. The recipes are broken down into months that they appeared in the magazine, instead of by categories like beef or chicken. Also there are a lot of salad recipes, which wasn't really what I was looking for, and there aren't many pictures in the book either. I found a few things in the book I want to try, maybe I could have found more if it was set up a little differently.

I am a finicky cook. I have very specific requirements when it comes to cookbooks and recipes: I don't like recipes that take too long (if I get tired just reading the list of ingredients, then I know I will not be making that recipe); I don't like recipes that require too many pots and pans and, of course, the recipes must be extremely easy to prepare - impressing everyone around me and making them think that I have just spent hours and hours slaving in the kitchen, when I know that I was lucky enough to find a great recipe book that just makes me look like a wonderful cook!!!!
Well, the Enlightened Soups cookbook is the perfect answer! Its absolutely freezing here in my part of the world, and I can think of nothing better than a wonderfully hot, homemade soup to warm me up. This cookbook offers over 130 different types of soups - each one containing only healthy ingredients and requiring a minimal amount of time in the kitchen.
I love the way the book is sectioned off, either by groups of food such as poultry soups or seafood soups then further broken down by "soups by total time" with the longest taking 60 minutes to make. There is also a handy little section at the back detailing the vegan soups, the low-cal soups, the spring and summer soups, as well as a table of contents with the soups listed alphabetically. This is probably one of the best-referenced cookbooks I have ever used.

As for the recipes themselves? Well, I have not been able to work my way through the entire 135 recipes yet, but I have tried a total of 10 so far and each and every one of the recipes have been wonderfully easy to make and extremely easy to eat! The directions are easy to understand and the ingredients used are common to everyday kitchens.
Soups always make me feel secure and content, and this cookbook is an absolute treasure! The only little thing I would have to mention is that I really like accompanying photos in my cookbooks and this book has a few shots at the beginning of the book but that's it. It would have been nice to have some pictures to go with the actual recipes.
Other than that little comment, I loved this cookbook. Perfect for a cold, wintry day

This is one comprehensive cookbook. Featured are 1,000 recipes within chapters such as appetizers/beverages, breads, desserts, fish/shellfish, grains/pastas, meatless main dishes, meats, poultry, salads/dressings, sandwiches, sauces/condiments, soups/salads and veg. side dishes.
In true "Cooking Light" fashion, there are complete nutritional breakdowns, serving size recommendations and prep times for each recipe. The additional handy chapters, which describe essential kitchen tools, pantry must-haves, and food substitutes help arm you with the knowledge you need to make healthy eating a lifestyle.
But best of all, there are many full-color photos throughtout the book which give inspiration to those of us who are visually-oriented. Most ingredients can be found in any supermarket and most recipes can be completed within 30-45 minutes (according to the prep and cooking times given).
The only qualm I have is that some of the recipes are repeats from previous Cooking Light cookbooks, and the number of desserts featured. There are too many for my taste, but for those of you who do make desserts often, you'll have plenty to choose from!
All in all, a worthy addition to your cooking library.

I've used all the Cooking Light cookbooks - this is the one I always return to. I can always find something when I'm searching for a menu plan. I haven't found a mediocre dish in this book yet. Great variety and lots of choices for the basics (like: chicken etc). Easy, clear directions using mostly have-on-hand or easy to find ingredients.

I am not a great cook and can't always take the time to try new recipes, but the photos got me inspired and the recipes kept me going. The recipes are easy enough for everyday use. My daughter is learning how to cook and this is a great book for her to start with. Now I'm checking out the other Cooking Light cookbooks.

I buy the Cooking Light Annual Recipe collections religiously and each volume since 1997 occupies an easily accessible shelf in my kitchen. I still enjoy the magazine but these books are great for those nights when you want to do something different with the chicken (or whatever).
After four months, I doubt this will be my most used volume. CL has gotten a bit fancier each year and I still turn to earlier volumes when I want a light version of everyday fare. What's really missing from this book (or their internet site) is a five star index. The book includes indexes for name, main ingredients and order of appearance. My wish -- an index by cuisine since I love Asian food.
Bottom line: Not necessarily a book for dieters but a good resource for people seeking to eat and live in a healthy manner.

I've subscribed to Cooking Light and it's predecessers since the 70's - I love to cook and try new recipes. This book not only contains the staffs favorites, but many of my own - and finding them is alot easier than going through years of old magazines. The only draw back I can think of is the lack of pictures - for those who need them to be inspired. Don't let that stop you, the recipes are wonderful - give it a try!

I can't believe no one has commented on this book yet. It has the creme of the crop from years past, all with beautiful photos of the finished recipe. So far I have made: Double Crust Apple pie, Texas Sheet Cake, Pecan Pie, and the New York Cheesecake. All of them have been absolutely delicious, with easy to understand directions and ingrediants that can be found just about anywhere. There are many more that I have marked to try yet, in fact thumbing through the book I find very few recipes that don't make my mouth water.
Also included throughout the recipes are little tips and suggestions to help the beginner and more advanced cooks alike. Included in the end of the book is some general guidance describing various kitchenware and baking techniques. This would definately be helpful for the beginning cook. I would have liked to see a section that shows you how to take a recipe and lighten it up. However, take any of these recipes and search online for the full calorie version and it's not too hard to see where they make their changes.
What you may not find: Low carb dieters or people with diabetes probably would be best to look elsewhere. Cooking Light doesn't necesarily shy away from sugar, flour, or other carbs. Conversely the recipes frequently aren't low fat either. A lot of the recipes use small amounts of full fat butter and even occasionally shortening. If this scares you, you can pretty easily adapt the recipes to fit your diet (probably sacrificing some taste). This book focuses more on great taste and portion control. All the recipes have reasonable caloric levels, but sometimes there portion sizes are a little small, so if you worry about that "just one more bite" mentality... the recipes in this book could be dangerous. Myself, I portion everything out for the week. If I cheat early in the week, come Friday I am going to regret it because I won't have anything to eat.
On my final note, don't be put off by their "only" being 62 recipes in this cookbook. These are Cooking Lights best dessert recipes, no fillers. I'd much rather have fewer recipes if it means they are fully illustrated and top quality.

Honestly, I like this book better than the Better Homes & Gardens cookbook. Why? The instructions are better worded, the ingredients clearly marked at the beginning of each recipe, there are lots of pictures of nearly every recipe, and on each page there's interesting "tidbits" of information about different kinds of foods (such as the differences between different kinds of potatoes, how to care for strawberries, the history of fat in meats).
A lot of the recipes are made from things that you would normally have in your pantry, so that shopping specially for a recipe isn't a necessity. The recipes are so fast you won't have time to set the table, and so easy to follow you'll feel like Julia Child.
Who cares if these recipes are healthy? They're too yummy to count the few calories in them!

Due to a recent heart condition my doctor told me to lose weight. I wanted to go on a low-fat, low-cholesterol, low-sugar and low-sodium diet, but I thought by doing all of that I would never eat good foods again. Boy, was I wrong! I purchased the American Heart Association's Low-Fat, Low-Cholesterol Cookbook and have never tasted better foods. I have not found a recipe that I don't like! Using these recipes and an excellent walking program I have lost almost 50 pounds between February and August 1999. Several of my favorite recipes from this cookbook are: Crispy Oven-Fried Chicken, Chili, Vegetable-Beef Burgers, Spicy Baked Pork Chops and (my favorite) Meat Loaf with Roasted Vegetables (mmmmmmm). My heart is now as strong as ever and I owe it all to my walking program and recipes from the American Heart Association's Low-Fat, Low Cholesterol Cookbook. One other note, two months after I strated using these recipes, my doctor took me off cholesterol medication.

I've tried several of the recipes. The Angel Food Tira Misou Torte is divine. All low in fat and high in taste. I served several recipes at potlucks and I got raves, no one knew they were light recipes.
The index is not very good and it could use more photographs.

I am only a recent cooking light devotee- I started geting the magazine about a year and a half ago, and I tend to cook 1 or 2 of the recipes every month- normally out of the section with the grocery list included. At the end of the year, I have a stack of magazines with torn out pages for the coupons and some tears from being carried on airplanes and such.
I love the compilation! This book is a hardcover of all of the previous year's cooking light recipes- in order by the month they appeared in the magazine. They are indexed in the back by title and ingredient. Every recipe has all of the nutrtion information, so if you're watching your intake, it makes things easy. One of the biggest things about cooking light is that if you're in the mood for something in particular, there's normally a recipe in the last month or so that has had it- be it pork tenderloin or some asian chicken. This compilation takes care of that.
The pictures in the center are the only pictures in the book, but if you've looked through the magazine throughout the yeear, you're normally ok with it- as they have a picture and a store for every recipe. However, if you need photos, this isn't the cookbook for you. (I recommend Dinner Tonight by Cooking light :Cooking Light The Essential Dinner Tonight Cookbook: Over 350 delicious, easy, and healthy meals However, if you're looking for hundreds of recipes with some of them even having your grocery list for a week's worth of meals, this is the one for you.
