I was very excited to buy this Haitian cookbook. However, it has been disappointing. The proportion of water and seasonings for dishes are off. I tried several dishes and they all tasted watery and plain. I even tried reducing the water amount by 1.5 cups in the Rice and Beans recipe and it was still watery. The only good thing about this book is that it tells you the basic ingredients for these dishes. I would not recommend this book to anyone wanting to cook genuine Haitian food.
