(More customer reviews)I avoid most healthy cookbooks, mainly because I don't believe in dieting per se, but also because most of them are full of bland "diet foods" or recipes full of fake substitute ingredients. But Cooking Light has always earned my respect because they offer good food that's tweaked just enough to make it healthier while preserving the flavor and integrity of the original dish, and not insulting my intelligence by trying to convince me that a piece of boiled chicken and a dry, undressed salad, with a glass of chemical-sweetened diet soda on the side, make for a delicious meal.
This latest Cooking Light book does not disappoint. As the title suggests, these are recipes for dishes that most of us, if we're honest with ourselves, absolutely love - comfort food. You'll find timeless favorites ranging from chicken and dumplings and pot roast with mashed potatoes, to sweet rolls and key lime pie. And the best part is, the changes do not come from things like artificial sweeteners and unsatisfying tricks like using chicken broth to make mashed potatoes. The recipes call for real ingredients, used in sensible moderation and smaller amounts than the original recipes. Things like butter, sugar, and low and no-fat dairy products. If, like me, you prefer not to use the non-fat stuff, it's easily switched out for the reduced-fat variety, with little change in per-serving fat or calories.
The smart, sensible balance achieved by this book makes eating healthier a do-able goal, far easier than the fake ingredients and deprivation found elsewhere. Hungry girl? Nope, a satisfied woman. Highly recommended.
